Organic Einkorn Grain seed aka Farro Piccolo
Einkorn (Farro Piccolo) is one of the earliest cultivated forms of ancient grain or wheat. Also known as Triticum Monococcum, with 14 chromosomes, Einkorn was first domesticated ~ 10,000 years ago. Compared to modern wheat varieties, it has petite kernels, a rich nutty flavor and typically higher protein content. Bread made from Einkorn has a distinctive slightly sweet flavor and has been judged favorite in many tasting panels. It is a very soft wheat that can be roasted and seasoned to eat (similar to sunflower nuts) or added to recipes such as cookies in place of oatmeal. Einkorn has very weak gluten, perhaps the weakest of any wheat, meaning it does not rise well in bread, however sometimes those with gluten sensitivity can tolerate items made with Einkorn. It thrives in poor soils and drought conditions where others would suffer. Higher protein content and lower gluten make it a nutritious alternative. Einkorn has a hull that must be removed before grinding for flour, though not necessary if it is being used for sprouts or wheat grass.
